I originally thought quinoa could only be served hot, but was told it also works well in salads. So thank you to ‘puddingem’ who gave me the idea to do this. I tried this out today for lunch and it was quite delicious.
The great thing about salads, is that there are no rules. You don’t need precise measurements and you can use whatever ingredients you want.
-Quinoa (half a cup of uncooked quinoa for a single serving)
-Fresh oregano, basil and rocket
-Halved cherry tomatoes
-Balsamic vinegar & olive oil for the dressing.
